This original monograph on which this document is based was prepared by the Central Food Technological Research Institute (CIFRI), Mysore, India, for the Food and Agriculture Organization of the United Nations. This being the first effort of its type to bring together the subject of qualitative losses in grains and grain legumes after harvest, it is realized that there are certain inadequacies in the coverage. The decision to prepare and issue the paper is taken in the light of the general lack of information on this subject when taken as a whole. In this there is a significant contrast with the information available on quantitative post-harvest losses of grain.
