This document defines the communications protocol specifications governing
kitchen appliances in catering facilities. The protocol, built on the Open
ModBus Ethernet network, greatly facilitates the integration of new
appliances into an institutional kitchen : it enables appliance
interconnectivity and interoperability, along with connexion to a
centralized supervision system ; it promotes interchangeability between
similar kinds of kitchen appliances from different manufacturers.
